Plate Up. Super quick and easy tuna pasta



This dish is perfect for when you’ve had a long day or are running low on time yet still want a delicious meal. It’s also a great dish for any number of people; from 1 to many. The recipe below is for 1 person, but can easily be doubled, tripled, etc. depending on how many you are cooking for. I promise you’ll be eating a delicious meal in 10minutes. Ready, set, go!

What you’ll need
Tagliatelle
95g tinned tuna
1 dessert spoon tomato paste
½ cup water
1 teaspoon caster sugar
1 spring onion stalk, sliced
2 sprigs parsley, roughly chopped
Lemon

What to do
Boil water in a saucepan for your pasta and cook to al dente.

Meanwhile, in a small saucepan, place the tomato paste, water and sugar and cook over medium heat until it boils. Season well and simmer for 2 minutes until the sauce thickens, then turn off and leave to cool. Once the temperature has reduced slightly stir in the tuna, spring onion and parsley.

By now your pasta will be cooked. Drain and then pour the sauce over the pasta and toss in the saucepan. Serve with a wedge of lemon.
